Chili Lime Chicken Salad
This is a great option to make ahead and prep for lunches for the week.
3 tbsp greek yogurt
2 tbsp fresh lime juice
1 tsp chili powder
1 tsp raw honey (I used a maple/agave blend so my 7 month old could safely have it)
3 cups chopped grilled chicken breast, boneless, skinless (I used rotisserie chicken)
1/2 medium red onion finely chopped
1/2 cup raw pumpkin seeds
8 large Boston or Bibb lettuce leaves (or any lettuce cups you can find)
2 cups of baby spinach
Combine yogurt, honey, lime juice and chili powder in a small bowl and whisk.
Combine chicken, onion, pumpkin seeds, and dressing. Toss to blend.
Top lettuce leaves with spinach and chicken salad.
One serving = 2 lettuce leaves topped with salad and spinach
