Crockpot Chicken and Zucchini
Here is a great recipe I found on Mommysavers. The simple flavors come together in a dish that packs a nutritional punch!

3-5 boneless chicken breasts
1/4 c. flour
1 tsp sea salt
1/8 tsp pepper
2 tbsp freshly grated parmesan cheese
1/2 tsp paprika
1 lb zucchini cut into thin slices
1/2 c chicken broth
4 oz can of mushrooms (or fresh mushrooms)
Sprinkle chicken with sea salt. Combine flour, pepper, cheese and paprika; coat chicken with mixture.
Place zucchini in bottom of crockpot. Pour broth over zucchini. Arrange chicken.
Cook on low for 5-6 hours or until tender. Adjust crockpot to high, add mushrooms, cover and cook for another 10-15 minutes.
