Crockpot Chili
Something about football season screams chili for me! Here's a super easy, clean eating recipe. Perfect for football Sunday!
To make this recipe here is what you will need:
1 lb of extra lean ground turkey
1/2 sweet onion finely chopped
1 green pepper finely chopped
2 cans of diced tomatoes (no salt added or low sodium)or 2 cups of fresh diced tomatoes
1 can of black beans (low sodium or no salt added) rinsed
2 cans of kidney beans (low sodium or no salt added) rinsed
1 can of cannelloni beans (low sodium or no salt) rinsed
1 can of shoepeg corn rinsed or fresh corn
1 tsp minced garlic
1 can or pureed pumpkin or 2 cans of tomato paste
1 tbsp chili powder
1/2 tsp of cumin
Place all the ingredients in the crockpot on low for 6 hours. You can serve with greek plain yogurt or natural sour cream. Shredded cheese is sure to please everyone as a topping too. Enjoy!
