Eggs with Sweet Potatoes and Brussels Sprouts

Brussel sprouts...for BREAKFAST?!

Yep, you read that right!

I never liked brussels sprouts until a few months ago and now I can't get enough!

This is a double duty recipe because I make the sweet potatoes and sprouts ahead of time in a big batch to use as sides for other meals as well!

Ingredients
brussels sprouts
sweet potatoes
eggs
evoo
himalayan salt
pepper
Trader Joe's 21 seasoning salute

Directions:
preheat oven to 400 degrees
remove ends and cut brussels sprouts into quarters (I also like to peel off leaves to let them crisp up)
peel and cut sweet potatoes, chop into 1-2 inch chunks
drizzle evoo (about 1tbsp) and seasonings, toss to coat
spread on parchment paper
bake for 20 minutes (or until your liking)
cook an egg (I like mine over medium)
top your brussels sprouts/potato mixture with your eggs!

This recipe can be varied to include other veggies like broccoli, asparagus, butternut squash, etc!
