For months now I've been making a chili lime cod recipe. My husband still loves it, which I know makes it a keeper, because typically once I've made something 3 times, he's over it!
This is super easy, super delicious, and super clean! Winner!!!

For months now I've been making a chili lime cod recipe. My husband still loves it, which I know makes it a keeper, because typically once I've made something 3 times, he's over it!

Ingredients:
- 2 lbs fresh cod fish fillets
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano, parsley or cilantro
- 1/2 teaspoon salt (I use himalayan salt)
- 2 tablespoons coconut oil
- 1/4 teaspoon cumin
- 1 lime, juice of
- Preparation:
- Heat oven to 450F
- Coat pan (I use a roasting pan) with cooking spray (I use coconut oil spray)
- Place cod in pan and sprinkle with chili powder, herbs, and salt
- Roast for 7 minutes (until opaque and flaky)
- melt coconut oil in saucepan or microwave, stir in lime and cumin
- drizzle oil sauce over fish before serving
