Clean Eating Zucchini Lasagna

2 zucchini sliced into thin lengthwise strips (to closely mimic lasagna noodles)
1 lb ground turkey
2 tbsp dried basil
2 tbsp dried parsley
1 tbsp minced garlic
1/2 cup fat free or part skim ricotta
1/2 cup shredded mozzarella
1/2 cup your favorite marinara sauce

Directions
In a skillet combine ground turkey and garlic. Brown. Drain off excess fat if necessary. Add basil, parsley, and marinara. Simmer for 20 minutes.
In a pyrex pan or loaf pan (I made individual loaf pan servings) layer zucchini, ricotta (sprinkled with basil/parsley), mozzarella, meat mixture. Repeat.
Bake at 350 for 25 minutes (this leaves zucchini al dente).
